Bio: 
Nigel founded Maltdoctor Ltd in 2020, a specialist sustainability consultancy in food and beverages. He has spearheaded the establishment of farmer support groups focused on sustainable agriculture and regen ag. Back in 2004 he designed the world’s first carbon footprint tool for malting barley. Nigel is Honorary Associate Professor at Nottingham University, School of Biosciences and on the Scientific Advisory Board for Ateria Health – a business promoting animal nutrition and health and is a Senior Advisor, Technical and Sustainability for First Key, a consultancy specialising in Malting, Brewing and Distilling. Nigel is a Fellow of both the Institute of Food Science and Technology and Institute of Brewing and Distilling and has a Diploma in Brewing with distinction. Previously he was Director of Manufacturing, Technical and Sustainability with Muntons for 25 years, a research scientist in cereals and a lecturer in cell biology at London University and acts as an expert witness in cases where food safety of cereals is at issue. He is reviewing editor on a number of international scientific journals.

Bio:
Dr. Nathan Pelletier is an Associate Professor, jointly appointed in the Faculty of Science (Biology) and Faculty of Management at the University of British Columbia – Okanagan. Nathan holds the Egg Farmers of Canada Industrial Research Chair in Sustainability and is Director of the Bachelor of Sustainability program. His work is broadly situated in the fields of ecological economics and industrial ecology, emergent research areas focused on understanding and managing the sustainability dimensions of economic activity.
